Here in our little Redondo Beach restaurant, Basque Espelette is one of the most widely used ingredients in our tapas dishes. Sometimes at the end of a late night shift, Chef Michael would bake off a sheet of Chocolate Chip Cookies flavored with Espelette to provide a little sugar kick for the staff.
It didn't take long for customers to smell what we were up to and soon we were sharing our Espelette Chocolate Chip cookies with guests in our dining room who just had finished their pintxos and sangria!
We got such enthusiastic feedback from them, we decided to start this website so that everyone could enjoy Espelette Chocolate Chip Cookies and our guests could share them with friends and family wherever they live!
Every time we receive a cookie order, we make it with the same loving care and attention we give to our in-house guests dining with us. We bake each batch to order and make sure it's in the mail the same day! The carrying box was designed and hand-printed by Jessica, narrating the story of how such a characteristic cookie came to be.
